The “Instant Present Mondeuse” from Domaine des Orchis, led by Philippe Héritier, offers a delightful experience with its aromas of spring flowers and red fruits. The Instant Present Mondeuse undergoes a 72-hour pre-fermentation as Semi-Carbonic Maceration before continuing fermentation in concrete. It then ages for about ten months on lees in barrels for several years and is bottled with minimal added sulfur, without fining or filtration. With a translucent garnet red color and scents of red and black currants, cherry juice, and hints of elderberry and violet flowers, it promises a refreshing and pure palate.
