With yields of around 15 liters per hectare, this cuvée results in less than 1000 bottles. The winemaking process involves semi-carbonic vatting for a few days during full harvest, followed by pressurization, fermentation, and aging for 18 months on lees. Aging occurs in 50% new oak and 50% used barrel. Bottling is done by hand with gravity, without sulfites, collage, or filtration, preserving the wine’s natural integrity and character.
