The “Quintessence d’Altesse” wine undergoes a meticulous production process. After pressing the Altesse grapes as whole clusters, the juice settles with yeast for 24 hours before fermenting and aging in used barrels for a year. With a medium straw-yellow color, the wine reveals an expressive Alpine character on the nose, featuring acacia flowers, jasmine, and warm biscuit dough, alongside ripe yellow fruits and hints of lemon zest, cinnamon, and nutmeg. On the palate, it offers a balanced interplay of ripe yellow fruit sweetness and vibrant acidity, leading to a long, structured, and saline finish.
