Domaine de la Roseraie, Senex 2018
Senex, deriving from Latin meaning “old” or “aged,” represents the essence of time and that the grapes which are coming from the oldest plots of Beaune and Nolay in Burgundy, France. With yields of around 15 liters per hectare, this cuvée results in less than 1000 bottles. The winemaking process involves semi-carbonic vatting for a few days during full harvest, followed by pressurization, fermentation, and aging for 18 months on lees. Aging occurs in 50% new oak and 50% used barrel. Bottling is done by hand with gravity, without sulfites, collage, or filtration, preserving the wine’s natural integrity and character.
