The Instant Present Mondeuse undergoes a 72-hour pre-fermentation as Semi-Carbonic Maceration before continuing fermentation in concrete. It then ages for about ten months on lees in barrels for several years and is bottled with minimal added sulfur, without fining or filtration. With a translucent garnet red color and scents of red and black currants, cherry juice, and hints of elderberry and violet flowers, it promises a refreshing and pure palate.

Domaine des Orchis, Quintessence d’Altesse 2022
The “Quintessence d’Altesse” wine undergoes a meticulous production process. After pressing the Altesse grapes as whole clusters, the juice settles with yeast for 24 hours before fermenting and aging in used barrels for a year. With a medium straw-yellow color, the wine reveals an expressive Alpine character on the nose, featuring acacia flowers, jasmine, and warm biscuit dough, alongside ripe yellow fruits and hints of lemon zest, cinnamon, and nutmeg. On the palate, it offers a balanced interplay of ripe yellow fruit sweetness and vibrant acidity, leading to a long, structured, and saline finish.
